Product Spot: Dr. Praeger's

We love Dr. Praeger's potato pancakes and kid's products. Natural Ingredients and a quick cooking time under 20 minutes. I use our toaster oven which does not have a broil setting so I just use the highest setting of 450 degrees and it cooks in the same amount of time. Dr. Praeger's has a ton of other products including many gluten fee options. The ones listed below are the ones we have personally tried and loved. I have found these at Woodman's and Super Target.

Broccoli Pancakes

Ingredients: Broccoli, Potatoes, Onions, Egg Whites, Oat Bran, Expeller Pressed Canola Oil, Arrowroot, Salt, Garlic, Black Pepper

Spinach Pancakes

Ingredients: Spinach, Potatoes, Onions, Egg Whites, Oat Bran, Expeller Pressed Canola Oil, Arrowroot, Salt, Garlic, Black Pepper

Veggie Littles

Ingredients: Carrots, Onions, String Beans, Zucchini, Spinach, Expeller Pressed Canola Oil, Broccoli, Red Peppers, Corn Meal, Corn Starch, Potato Flakes, Arrowroot, Salt, Garlic, Rice Starch, Parsley

Spaghetti Squash with Chicken

1 medium spaghetti squash
3  Tbs. butter or olive oil
2 cloves chopped garlic
1/2 cup parmesan
1 cooked shredded chicken breast

-Preheat oven to 375 degrees
-Take raw squash and take a little aggression out and stab it about 6 times (this lets out the steam)
-Bake squash on sheet pan around one hour. It will be slightly pliant when pushed on.
-While squash is cooling melt butter in medium skillet. Add garlic and cook until fragrant.
- While garlic is cooking cut squash in half and scoop out seeds. Using a fork scrap squash until strands form.
- Take squash strands and add to butter and garlic. Mix until butter is well incorporated. If squash is not cooked to desired tenderness then saute longer.
- Add chicken and parmesan. Stir until well blended.
-Serve and Enjoy!

This is currently my little mans favorite meal. Since spaghetti squash naturally has a peppery flavor I leave that out. Currently my little man is too small for this but I bet older kids would love to scrap the squash and see all the strands being revealed. It may even entice them to be excited to eat their veggies! I also chop it up a bit for the boy otherwise it come out the other end in whole strands. :)

Here we go!

Let me start out by introducing myself. I am a full time working mom. My son is a year old and my husband is a restaurant manager who works very odd hours. When my son turned one and started eating more like a person than a baby I started to turn to the web trying to find quick easy ideas. Unfortunately there wasn't many ideas out there beyond the basic chicken, fruits, veggies, and cheese. Coming up mostly empty handed, I talked to my mommy friends. They were at a loss too. So I hit the stores. Since time is at a premium I am on the hunt for fast, easy, and nutritious recipes and products. I will share it here and hopefully other mommies will find some good ideas or inspiration.
