Spaghetti Squash with Chicken

1 medium spaghetti squash
3  Tbs. butter or olive oil
2 cloves chopped garlic
1/2 cup parmesan
1 cooked shredded chicken breast

-Preheat oven to 375 degrees
-Take raw squash and take a little aggression out and stab it about 6 times (this lets out the steam)
-Bake squash on sheet pan around one hour. It will be slightly pliant when pushed on.
-While squash is cooling melt butter in medium skillet. Add garlic and cook until fragrant.
- While garlic is cooking cut squash in half and scoop out seeds. Using a fork scrap squash until strands form.
- Take squash strands and add to butter and garlic. Mix until butter is well incorporated. If squash is not cooked to desired tenderness then saute longer.
- Add chicken and parmesan. Stir until well blended.
-Serve and Enjoy!

This is currently my little mans favorite meal. Since spaghetti squash naturally has a peppery flavor I leave that out. Currently my little man is too small for this but I bet older kids would love to scrap the squash and see all the strands being revealed. It may even entice them to be excited to eat their veggies! I also chop it up a bit for the boy otherwise it come out the other end in whole strands. :)
